Dark Chocolate Coffee Muffin low Carb phase 1

Phase 1: one Muffin is ok as Snack

1 batch will make 12 Muffins 

Tested : Fluffy, Soft  smell good and very delicious

Test better next day.  5 Star

Recipe

3 tb.sp Dutched unsweetened  cocoa powder

1 1/2 scoop whey chocolate protein isolate powder 

1/4 cup Stevia  or 1/2 cup to taste

3 large eggs
1/2 Cup olive oil /Canola Oil or Sunflower Oil 
1/2 cup plus little more water room temperature
1 tb.sp. Instant Coffee
3 tb.sp. chocolate chip ONS Aprroved  plus 1 tb sp for topping
I tb sp of Guar gum
1 tsp of baking powder
1/2 tsp of baking soda
1 cup Carbquick flour

In bowl oil eggs and stevia .  beat it until creamy. now pour water and  instant coffee  mix it well.

Mix all dry ingredients together and add in three batches. keep whisking .  make sure there will be no lumps. now add 3 table spoon of chocolate chip in and fold. scoop in greased muffin tray .  Sprinkle three chocolate chip on each muffin if they are big. 


Bake at 350F/ 160C for 30 minutes.


Let it cool remove from muffin tray . and enjoy one as a snack for phase 1.
