Bombay Biryani

Ingredients
2 kg chicken cubes bone in
300 grams chopped tomatoes

600 grams Potatoes remove skin cut in cube
In oil add sliced onion . Fry until golden brown.  Remove and keep a side.
600 grams onion sliced

Ingredients for marinating
Marinate chicken in these ingredients for 30 minutes.

3 tb.sp ginger paste
2.5  tb.sp garlic paste
5 tb.sp lemon juice
300 grams yogurt beaten
2 tb.sp red chilli powder
2 tbsp Corriander powder
1/2 tb turmeric powder
1 tsp salt for chicken or to taste.
2 tbsp Garam Masala powder
1/2 tbsp jyfal powder
1/2 tb.sp  javetri powder
1/2 tsp cloves
1/2 tbsp whole black pepper
4 Black cardimom whole
12 Dried plumps

In onion oil add potatoes and fry for 5 minutes.  Remove keep aside
Add marinated chicken whole garam masala.  Half of tge onion and chopped tomatoes and cook on high. Do not add water.
After 5 minutes cover and cook on 1/3rd flame till chicken is done  now remove oil from chicken and save it on side.

Spices for rice
Soak rice for 45 minutes . Then cook like normal Bhagat rice or boiled it with  all of the bottom ingredients.  Your choice

2 kg rice
5 black cardamoms
1 tb sp white zeera
2 of 2 inches cinnamon stick
1/4 TBSP Cloves
1/4 tbsp Black pepper
6 to 8 small green chillies
4 Anise seed
Salt to taste

DUM
1 TSP food color mix with 5 tb.sp  kewda water
1 cup hot milk seperate

For Layers

4 -6 green chillies
1 bunch chop mint
1 bunch chopped Corriander
1 cup warm milk

How to LAYERS

1st layer Rice
2nd chicken masala and potatoes
3rd chopped Mint,  Corriander,  fried onion
4th rice again,  fried onion food color mix with kewdra.

And pour hot milk on top of rice.

Cover and cook on low for 5 minutes

Bombay Biryani is ready

You can make with Mutton,beef or lamb too.

Enjoy with rata and kachumbar
