STEP BY STEP QUICK DUTCH OVEN BREAD

INGREDIENTS

6 cups bread flour / all purpose flour
1/2 tsp instant Yeast
2 tsp salt
3 cups warm water
2 tbsp honey/ sugar
2 cups white chocolate chip (Optional)

corn meal flour for dusting

METHOD

in large bowl combine flour, yeast and sugar, and other side salt.

stir with wooden spoon.   now add Luke warm water.  mix it with wooden spoon until dough foam.

it will be sticky.

now add white chocolate chip. mix well.  cover with plastic wrap .  top with wet towel and let it rise on top counter for 12 to 18 hours.

now it is ready to make a bread in morning.

IN MORNING

on top counter sprinkle little flour  remove dough on it. knock out some air .  do not remove all air  which was created by resting the dough for 18 hours.

cover it with wet cloth

now on top counter lay dry cloth.  sprinkle corn meal on it or flour or oats.

take dough and lay on top of this cornmeal.

sprinkle more cornmeal on top of dough.

now pick your cloth from all 4 corners and put the bread in the bowl , let the dough sit and rise for couple of hours (cover with cloth).

Bake

preheat oven 450F

put dutch oven with the lid on in the oven middle rack for 30 minutes.

now remove hot dutch oven from the oven.

Take your bread dough right out of the bowl and roll it in the dutch oven from the cloth.

Shake it to settle properly.

Cover the dutch oven with lid and put back in oven .

Bake it for 30 minutes.  Remove lid and bake without lid for 5 to 10 minutes more to make it crispy. and  if bread sounds hollow then it is cooked well from inside.

Pull out bread on wooden board immediately form dutch oven or wire rack. cool it for 15 minutes before slicing.

bread is ready to serve










Step by Step Italian Bread (quick and Easy Bread)

Ingredients

6 cups Bread flour unbleached
2 tsp salt
2 tbsp. olive oil
2 1/2 cups warm water
1 packet  rapid Rise yeast
1 packet active dry yeast
2 tbsp. brown sugar/ white sugar/ Honey

1 egg + 2 tbsp. water  for brushing bread

Bake 400F for 25 minutes

quantity:   2 bread loafs

Machine  :  kitchen aid with hook attachment (slow speed 1 and 2) for 8 to 10 minutes

note:  my KitchenAid machine is small in size so I will make half of this batch. (one Loaf) at a time

Method

In Mixer add flour, salt in one side and oil in other.

in warm water add yeast and mix well with spoon.  now add sugar and mix well again.  wait for 30 seconds to a minute.  once you will see foam in yeast it is ready to add in flour.

Turn on mixer to 1 speed (Low) and add half of the yeast and let it mix then add other half of yeast and let it go until nice big dough ball falls.

Mixing will take 5 to 8 minutes and dough slowly come out nice and clean from hock that means dough is ready and should not stick too much to the bowl.

This dough is ready .

Now in clean stainless steel bowl brush olive oil with napkin so the dough doesn't stick while rising.

  •   Now fold the dough in nice round ball and no seems on top of dough.
  •   Drizzle olive oil on top of dough and rub it around.
  •   Put it down on oil bowl.  Flip it over a little.  Let it rest in middle of the bowl, cover with  wet   towel and let it rise for 1 hour.   it will double in size.
2nd Proofing

  •   No on top counter sprinkle very little flour .  turn dough on this flour and punch bread a little.
  •   Spread dough down and fold it over.
  •   Punch it down and fold it again.  keep repeating folding process for 4 to 5 times.
  •   now cut dough into 2 for 2 loafs.  
  •   spread it out in rectangular shape like loaf bread.
Baking

  In cookie sheet(Tray)  lay parchment paper , sprinkle little flour and put rectangular loaf and cover with wet towel let it sit for another 1 hour (double in size).

With sharp knife apply olive oil on knife and cut the dough from the middle of each loaf so steam can scape.

Now brush with egg wash and Bake at 400F for 25 minutes.

check if bread sounds hollow then it is ready.

Remove bread from oven and put it on wire back for at least 15 minutes to cool.

You can slice bread now and serve.

Dalgona coffee super easy

 Dalgona COVID-19 Coffee

Enter Dalgona coffee, a DIY South Korean coffee trend, which has been popularised recently by video app, TikTok.
 
Dalgona coffee is a thick, creamy, frothy iced latte.

The cafe-style drink is super easy to make, and I bet you have all the ingredients at home to try it right now so no need to go out !!
 
Makes 2 Cups:
2 Tbsp Instant Coffee
2 Tbsp Sugar (I use Brown Sugar)
2 Tbsp Hot Water
500ml Milk (I use Almond Milk, 250ml per cup)
Ice
 
To make the drink, simply combine the equal parts of instant coffee, sugar and hot water, then whisk. When it comes to equipment, a hand mixer is best.
 
The whisking will take the mixture from a dark coffee colour, to a significantly lighter latte brown. 

It took around 5-7 minutes to achieve this with my hand mixer on medium.

Once it has thickened up its ready to serve.
 
Pop a few ice cubes in a glass, pour in the milk and then scoop a couple of spoonful’s of the coffee on top of the milk, give it a stir and you're ready to drink.
