Dhokro And Chutney 🌟 Family Recipe


Dhokla receipe

Ingredients: 
2 cups small grain rice
1 cup chaana daal
1 cup  yogurt 
4 tbsp oil
1/4 tsp heldi 
1 tsp salt or to taste
1 tbsp ginger paste 
1 tsp green chilli paste
1 tbsp lemon juice  
1 cup warm water
1 tsp baking powder  for two thaalis
1/2 tsp ENO SALT for each thaali 

Method

1. Place 1/2 cup or so of water in the large pan with s trivet inside it and start heating it on mid high.
2. Grease the 8” round pan with oil.

3. Wash rice and daal for 4 times.  Soak it for 5 hours must. 
4. Grind soaked rice and daal with yogurt into very fine paste.
5. Mix it with spatula for 5 minutes in same direction.
6. Cover and keep it in warm place for atleast 10 hours for fermentation. 
11. Add ginger paste. Green chillies paste, oil,  heldi and salt. Mix well. 
At this point you can cover and keep the batter in fridge. And use it whenever you are ready.  Batter is good in fridge for 3 to 4 days. 
12.  Now take batter out from fridge. Let it come to room temperature.   Add 1 tsp baking powder to one thaali. Mix it for 3 minutes until you see bubbles.   Mix in only one e direction  is important.  
7. Grease dhokla pan with oil.

8. When the water starts boiling in the large suferio/pan add baking powder and mix it, quickly pour the mixture in the 8” greased baking pan, sprinkle some red chilli powder on top of it and garnish it with some chopped coriander leaves on top (optional).

9. cover the pan and steam for approx 15 mins . Do not open to check.  After 15 minutes you can check it needed steam it for 5 minutes more and so on.

10.  After the cooking time is done, let the  dhokla sit for 5 minutes.
 Then open the lid of the pot slowly and take the dhokro out using tongs and place it on a trivet.
11.  Let it cool for 5 more minutes (or till you see the dhokla loosening at the edges)so it is easy to remove. Insert a knife or toothpick to check if it is cooked. The knife should come out almost clean. If not, you will need to steam for 2-3 more minutes.

12. Run a knife around the edges of the dhokro. Place a plate on top of the container and turn it upside down (This will help to get the dhokro out of the container easily).  Then flip the dhokro onto another plate so that you have a right side up.  Good luck, enjoy❤️

Dhokra Chutney

I usually make it in a bulk:

4 tbsp red chilli powder or
soaked whole round red chilli, remove seeds and then add in blender with all.of these ingredients.

1 tsp salt or to taste 

1 & 1-2 tbsp garlic paste

1 tsp coriander/cumin powder 

3 tsp tomato paste

2-3 tsp lemon juice 

2-3 tbsp slightly warmed olive or sunflower oil.  

Mix all the ingredients, adjust according to taste

If it’s too thick add some water to it
